Inulin is a labile polyfructose polymer found in many sources as chicory, artichoke and dahlia roots. It ́s derived FOS (Fructo-OligoSaccharides) are produced using endo-inulinases or alternatively with less expensive and safe catalysts such as phosphoric and citric acids with good yields. Inulin and FOS deserve an important role against some diseases as colon cancer because can be selectively fermented in the bowel by probiotic bacteria and also act in others beneficial effects such as improved calcium biovailability and in lowering triglyceride levels.
